Polish Beet Soup

This recipe comes from my friend Izabela Valero, who grew up in Poland. It’s a surprisingly delicious soup. The measurements are, um, less than exact, as I jotted down notes while we were cooking. You know how family recipes go…

1/2 cup onion (sautéed in olive oil)
3 carrots
1 parsnip
Bay leaf
1 pound beets
1 celery (stalk? Or whole? I didn’t write it down.)
1 sweet potato
2 potatoes
Add a little bit of water and cook just until tender. (Bring to a boil.)
Add:
1 can of whole green beans
1 cup chopped cabbage
Cubed tomato bouillon
Half chicken broth and half beef broth
Pepper
Italian seasoning
Chopped garlic (2 cloves?)

Continue boiling. Add 1 tablespoon lime juice at end. Can serve with cream, if you like.
