Coconut, Apple and Carrot Muffins

This is another recipe adapted from 1001 Muffins. Lots of ingredients, but they are yummy if you like muffins with lots of stuff in them. Recipe makes 16 muffins.
Dry-ish ingredients
1 1/2 cups flour
1/4 cup ground flax
1/4 cup wheat germ
1/2 cup wheat bran
2/3 cup brown sugar
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
2 cups grated carrot
2 cups grated zucchini
1/3 cup sweetened coconut flakes
1/4 cup raisins
1/2 cup ground walnuts
1 teaspoon grated orange peel
1/2 teaspoon salt
Wet ingredients:
3 eggs (or egg substitute)
1/4 cup oil
1/3 cup applesauce
2 tablespoons chia gel (or another 2 tablespoons oil)
1 1/2 teaspoons almond flavoring
  1. Preheat oven to 375.
  2. In a large bowl, blend together the dry-ish ingredients. In a medium bowl, beat the wet ingredients. Combine the two mixtures, blending just until the dry ingredients are moistened. The mixture will be thin.
  3. Spoon the batter into greased muffin cups, filling each 2/3 full. Bake for 15 to 20 minutes.
