Mock Cheesecake

This is my father’s favorite birthday treat and fast becoming a favorite with my children, as well. I was an adult before I tried real cheesecake!

1 9-inch crumb crust 
1(8 oz). pkg cream cheese (use 1/3 less fat kind)
1 (15 oz.) can sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla
1 (l lb.can) prepared cherry pie filling or Cherry Glaze

Beat cream cheese until fluffy. Gradually add condensed milk while mixing; stir until blended. Add vanilla and lemon juice and blend well. Pour into crust and chill 3 hours. Cover with pie filling or glaze. 
Cherry Glaze
1 cup of a 1 lb. can pitted and drained sour cherries
2 tablespoons sugar
2 t. cornstarch
1/2 cup cherry juice

Blend sugar and cornstarch. Stir in cherry juice. Cook until thick and clear stirring constantly. Add cherries and cool.
