Brownie Muffins

This recipe comes from my sister, Sylvia. I love how she manages to make brownies sound like breakfast food by making them into muffins! That totally fits into my way of thinking. Anyway, I have a hard time getting more than 10 muffins out of this recipe. I also added 1/2 cup chocolate chips to the mix. 185 calories per muffin without chocolate chips or 240 per muffin with. Not low calorie, but yummy!

1 3/4 cups flour
1/2 cup sugar
3 Tbsp. cocoa
2 1/2 tsp. baking powder
1/2 tsp. cinnamon
3/4 tsp. salt
1 beaten egg
3/4 cup milk
1/3 cup vegetable oil
1/3 cup chocolate chips (optional)

In mixing bowl, stir together the flour, sugar, cocoa, baking powder, cinnamon and salt. make a well in the center. Combine egg, milk and oil; add all at once to dry ingredients, stirring just till combined. Fold in chopped nuts if desired. Fill greased or paper lined muffin tins 2/3 full. Bake in 375 oven for 20 minutes or till done.  

Alternative: Chocolate Orange Muffins

To make chocolate orange muffins, substitute orange juice (with orange zest for good measure) for some or all of the milk. You can probably add 1/2 teaspoon of orange extract for a deeper orange flavor.
