Chocolate Zucchini Country Cake

This comes from my sister, Sylvia. It's actually a cake recipe for a 10 in. tube pan but I put it in loaf pans. Somehow, it sounds less bad for you if you call it “bread” instead of “cake,” so we usually call it “bread."

3/4 cup butter or margarine (I used just 1/2 cup butter)
2 cups sugar (I used just 1 cup sugar)
3 eggs
2 1/2 cups flour
1 tsp. salt
2 tsp. cinnamon
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/3 cup cocoa
1/2 cup milk
2 tsp. vanilla
2 cups grated zucchini


Cream together butter and sugar. Add eggs; beat well. Sift together dry ingredients and add to batter alternately with combined milk, vanilla, and grated zucchini. Beat well. Pour in to two greased loaf pans. Bake for 1 hour at 350 or till loaves test done. Cool on racks.
