Muffin Mix

This comes from my dear friend, Leslie Kay, and makes gloriously yummy muffins. The mix makes enough for 4 batches of muffins.

8 cups all-purpose flour
3 cups sugar
3 Tbs. baking powder
2 tsp. salt
2 tsp. cinnamon
2 tsp. ground nutmeg

Combine all ingredients, mix well.  Put in a large airtight container (or divide the mix among 4 separate quart jars).  Store in a cool, dry place.  Use within 6-8 months.
Melt-In-Your-Mouth Muffins
2 3/4 cups Muffin Mix (see above)
1 egg, beaten
3/4 cup milk
1/3 cup veg oil
2 ripe bananas, mashed (or 3/4 cup blueberries)

Preheat oven to 400F.  Put Muffin Mix in a medium bowl.  Combine egg, milk, oil and mashed banana in a small bowl.  (If using blueberries, add them to the flour mixture instead.) Add all at once to Muffin Mix.  Stir until mix is just moistened; batter should be lumpy.  Fill prepared muffin pans 3/4 full.  Top with optional Muffin Topping (see below). Bake 18 - 20 minutes, until golden brown.  Makes 12 muffins.
Muffin Topping
2 tablespoons sugar
1 tablespoon soft butter
1/2 teaspoon cinnamon
2 tablespoons flour
