This recipe came from my mother, who probably got it from Cooking Light magazine. It is delicious.
2/3 cup hazel nuts or walnuts
2 1/2 cups flour
2 cups whole wheat flour
1 1/2 cups water (100 – 110 degrees)
1 package yeast
1 cup coarsely chopped dried mixed fruit (6 oz. bag)
1/4 cup brown sugar
2 tablespoon veg oil
1 teaspoon salt
1 large egg, beaten
1/2 cup seedless red grapes (whole)
1. If
using hazelnuts, bake on baking sheet at 350 for 15 min. then roll on a towel
to remove skins. Then chop.
2. 1
cup white flour, water, yeast into a large bowl and stir with whisk to mix.
3. Cover
and let sit for 1 hour to make sponge.
4. Add
nuts and 1 cup white flour.
5. Add
all else except grapes. Mix.
6. Use
rest of flour as kneed (about 5 min.)
7. Arrange
grapes over dough.
8. Shape
into 8” round loaf on baking sheet. Brush dough with veg oil and sprinkle with
sunflower seeds.
9. Rise
for 45 min. or til double.

for 35 min.
