This is a cross between a coffee cake and a pound cake.
Either way, it’s delicious. We often have this on Christmas morning.
3 cups flour
2 cups sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup butter (softened)
1 cup milk
3 eggs
1 tablespoon vanilla
1/2 cup chopped nuts (optional)
1/2 cup quick cooking oats
1/2 cup packed brown sugar
2 teaspoons cinnamon
1/2 cup applesauce
- Generously grease and flour a bundt cake pan. In large bowl, combine first set of ingredients (flour through vanilla). Blend 3 minutes at medium speed of mixer. Spoon half of butter into pan.
- Into the other half of the batter, stir the second set of ingredients (nuts through applesauce) and spoon over batter in pan.
- Bake at 350 for 55 minutes or til toothpick comes out clean. Cool upright in pan 30 minutes, then remove.
