Banana Nut Muffins

This recipe is my own creation. I make and freeze batches of these, thawing the muffins out one at a time for my morning breakfast. Makes 10 muffins.

3/4 cup whole wheat flour
3/4 cup white flour
1/4 cup ground flax seed
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped walnuts
1/3 cup chocolate chips
1 cup mashed bananas
2 tablespoons veg oil
2 or 3 tablespoons chia gel (or just double the oil, if you don't have chia seeds)
1/3 cup brown sugar
1 teaspoon vanilla
1 egg (or 1/4 cup liquid egg whites)
1/4 cup milk

Mix dry ingredients and wet ingredients separately. Combine, Bake at 350 for 20-25 minutes.
Chia gel

Put 1/3 cup chia seeds in a pint jar with enough water to fill the jar. Stir the mixture until it begins to thicken. You can store it in the fridge for a couple of weeks.
