Geniel Fife is a friend from Vermont, and her pesto is
positively legendary.
1/3 C fresh basil leaves (packed)
1/3 C fresh cilantro leaves (packed
1/4 C almonds
1/4 C pine nuts
2 cloves garlic
1/4 t. Celtic Sea Salt
1/4 C olive oil
1 tablespoon lemon juice
1 C. fresh tomato (optional)
In a blender, grind almonds and pine nuts to fine texture.
Add remaining ingredients except tomato and blend. Add tomatoes and pulse till
just blended...not pureed.
