This is another recipe adapted from 1001 Muffins. Lots of ingredients, but they are yummy if you like
muffins with lots of stuff in them. Recipe makes 16 muffins.
Dry-ish ingredients
1 1/2 cups flour
1/4 cup ground flax
1/4 cup wheat germ
1/2 cup wheat bran
2/3 cup brown sugar
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
2 cups grated carrot
2 cups grated zucchini
1/3 cup sweetened coconut flakes
1/4 cup raisins
1/2 cup ground walnuts
1 teaspoon grated orange peel
1/2 teaspoon salt
Wet ingredients:
3 eggs (or egg substitute)
1/4 cup oil
1/3 cup applesauce
2 tablespoons chia gel (or another 2 tablespoons oil)
1 1/2 teaspoons almond flavoring
- Preheat oven to 375.
- In a large bowl, blend together the dry-ish ingredients. In a medium bowl, beat the wet ingredients. Combine the two mixtures, blending just until the dry ingredients are moistened. The mixture will be thin.
- Spoon the batter into greased muffin cups, filling each 2/3 full. Bake for 15 to 20 minutes.
