Pumpkin Cranberry Muffins

Original recipe is from Taste of Home. As usual, I have altered it.

Ingredients

1 cup whole wheat flour
1 cup white flour
1/4 cup vital wheat gluten (or an extra 1/4 cup whole wheat flour)
1 teaspoon baking soda
1 teaspoon pumpkin pie spice (or 1/2 t cinnamon, 1/4 t each ginger and nutmeg, 1/8 t ground cloves)
1/2 teaspoon salt
2 large eggs
1/2 cup sugar
1 cup canned pumpkin
1/3 cup canola oil
1 cup fresh or frozen cranberries, chopped

Directions

  1. Mix together dry ingredients.
  2. Mix eggs, sugar, pumpkin and oil.
  3. Add wet ingredients to dry and add cranberries. Mix til combined.
  4. 375 for 20 minutes or until done.
