Ingredients
1 cup whole wheat flour1 cup white flour
1/4 cup vital wheat gluten (or an extra 1/4 cup whole wheat flour)
1 teaspoon baking soda
1 teaspoon pumpkin pie spice (or 1/2 t cinnamon, 1/4 t each ginger and nutmeg, 1/8 t ground cloves)
1/2 teaspoon salt
2 large eggs
1/2 cup sugar
1 cup canned pumpkin
1/3 cup canola oil
1 cup fresh or frozen cranberries, chopped
Directions
- Mix together dry ingredients.
- Mix eggs, sugar, pumpkin and oil.
- Add wet ingredients to dry and add cranberries. Mix til combined.
- 375 for 20 minutes or until done.
