Ingredients
1 large head of cauliflower (about 4 cups when grated, see instructions below)
1 large egg, beaten
1/2 cup part-skim mozzarella cheese, shredded
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for brushing the crust)
Directions
To rice the cauliflower:
- Grate the cauliflower into a rice-like consistency.
- Put riced cauliflower in a microwave-safe bowl and microwave for 5-6 minutes.
- Transfer the cooled cauliflower to a clean kitchen towel or cheesecloth and squeeze out as much water as possible. You should end up with about 1.5 to 2 cups of dry pulp.
To make the crust:
- Preheat oven to 400.
- Combine the dry riced cauliflower, egg, mozzarella, Parmesan, garlic powder, Italian seasoning, salt and pepper to create a dough.
- Line a baking sheet with parchment paper. Transfer the mixture to the parchment and press it into a thin, even circle or rectangle, about 1/4 inch thick.
- Brush the surface generously with the olive oil.
- Pre-bake the crust for 20-25 minutes, or until the crust is golden brown and firm, especially around the edges.
- Add your favorite pizza sauce and toppings.
- Return to the oven and back for an additional 10-15 minutes, or until the cheese is melted and bubbly.
